AirServer only interprets the orientation information sent over AirPlay. Due to a bug within all versions of iOS prior to iOS 14, the Camera app in iOS does not send the correct orientation through which is why the mirrored image does not rotate.

This bug has been fixed in the final release of iOS 14.
